Meet the Fallingwater Café's New Chef
Tom Shuttlesworth, a native of Fayette County whose culinary resume extends from Grammarcy Park in New York City to the financial district of San Francisco is now Café Manager at Fallingwater, the Frank Lloyd Wright masterpiece home in Mill Run, Pa.
Shuttlesworth is a graduate of West Virginia University and the New England Culinary Institute. A native of Fayette County, he has worked in a wide variety of restaurants including his own Wildwood Flower restaurant in Morgantown, Grammercy Tavern in New York, Aqua in San Francisco and Nemacolin Woodlands, where he was Sous Chef.
Describing his stock in trade as "creating good, hearty, straightforward, bold flavors," Shuttlesworth said he is really looking forward to creating dishes at Frank Lloyd Wright's masterwork. It's pretty incredible to walk down the path and see Fallingwater and think 'Oh, yes, this is where I work,'" Shuttlesworth said.
"We are delighted to have Tom Shuttlesworth joining the team at Fallingwater" said Fallingwater Director and Western Pennsylvania Conservancy Vice President Lynda Waggoner. “Having dined at Tom's former restaurant, Wildwood Flower Farm, I am familiar with the exceptional quality of his cuisine. That and his personal commitment to using healthy, fresh and locally grown products make him a perfect fit with our philosophy at Fallingwater."
Shuttlesworth believes working at the Fallingwater Café will expand his creative horizons. "The chance to work within this environment with a new palate of flavors, textures and dishes is an unbelievable creative opportunity for me," Shuttlesworth said.
Ever appreciative of a challenge, Shuttlesworth's integrity and talent continue to keep him searching for new culinary creations.
